đ„Šđ§ Cauliflower Broccoli Bacon Bake (Keto Comfort Food!)

Creamy, cheesy, smoky, and packed with low-carb veggiesâthis bake is the ultimate keto side dish (or a main if youâre like me and eat it straight out of the dish with a fork đ). It's quick to prep, seriously satisfying, and bacon makes everything better, right?

đ Ingredients:
- 1 small head cauliflower, cut into florets
- 1 small head broccoli, cut into florets
- 6 slices streaky bacon, chopped
- 150g cheddar cheese, grated (Mature if you like a kick)
- 50g of parmesan cheese
- 300ml double cream (heavy cream)
- 20g butter
- 3 garlic cloves finely chopped
- 3 Shallots finely chopped
- Salt and pepper to taste
- Optional: Splash of white wine vinegar and a sprinkle of paprika or chopped chives for garnish
đȘ Method:
- Preheat oven to 190°C (375°F).
- Steam or boil the cauliflower and broccoli for 5-10 minutes until just tender. Drain well and set aside.Â
- In a frying pan, cook chopped bacon until crispy on a medium high heat. Set aside, leaving a little bacon grease in the pan. If you have some gorgeous crispy bacon bits stuck to the pan here add a small splash of white wine vinegar to lift and cook down for 1 minute.
- In the same pan turn the heat down, melt the butter, then add garlic, shallots,. Stir and cook on a low heat until soft.
- Add the double cream season with salt and pepper. gently being the cream up to temperature.Â
- Stir in  the cheddar (leave a little for later) and add all of the Parmesan until melted and gooey.
- Add the broccoli, cauliflower, and half the bacon to the cheese sauce. Stir to coat.
- Pour everything into a baking dish, sprinkle with remaining cheddar and bacon.
- Bake uncovered for 20â25 minutes, or until bubbling and golden.
- Optional: Sprinkle with chopped chives or paprika before serving.
