đŸ„ŠđŸ§€ Cauliflower Broccoli Bacon Bake (Keto Comfort Food!)

Creamy, cheesy, smoky, and packed with low-carb veggies—this bake is the ultimate keto side dish (or a main if you’re like me and eat it straight out of the dish with a fork 😏). It's quick to prep, seriously satisfying, and bacon makes everything better, right?


🛒 Ingredients:

  • 1 small head cauliflower, cut into florets
  • 1 small head broccoli, cut into florets
  • 6 slices streaky bacon, chopped
  • 150g cheddar cheese, grated (Mature if you like a kick)
  • 50g of parmesan cheese
  • 300ml double cream (heavy cream)
  • 20g butter
  • 3 garlic cloves finely chopped
  • 3 Shallots finely chopped
  • Salt and pepper to taste
  • Optional: Splash of white wine vinegar and a sprinkle of paprika or chopped chives for garnish

  • Preheat oven to 190°C (375°F).
  • Steam or boil the cauliflower and broccoli for 5-10 minutes until just tender. Drain well and set aside. 
  • In a frying pan, cook chopped bacon until crispy on a medium high heat. Set aside, leaving a little bacon grease in the pan. If you have some gorgeous crispy bacon bits stuck to the pan here add a small splash of white wine vinegar to lift and cook down for 1 minute.
  • In the same pan turn the heat down, melt the butter, then add garlic, shallots,. Stir and cook on a low heat until soft.
  • Add the double cream season with salt and pepper. gently being the cream up to temperature. 
  • Stir in  the cheddar (leave a little for later) and add all of the Parmesan until melted and gooey.
  • Add the broccoli, cauliflower, and half the bacon to the cheese sauce. Stir to coat.
  • Pour everything into a baking dish, sprinkle with remaining cheddar and bacon.
  • Bake uncovered for 20–25 minutes, or until bubbling and golden.
  • Optional: Sprinkle with chopped chives or paprika before serving.
